Blood Sausages – Kiszka

Polish kiszka (KEESH-kah), also known as kaszanka or krupniok, is sausage made with fresh pig's blood. A popular aspect of Polish cuisine, this type of sausage exists in most cuisines around the world. It was originally made to use up left over scraps of meat and typically made with spices and grains such as barley or buckwheat groats. Once enjoyed only on special occasions, nowadays blood sausages are available throughout the year and are found in every Polish deli! They are traditionally served hot, and enjoyed with a slice of good, Polish rye bread, mustard, pickled cucumbers or sauerkraut … and a glass of strong Polish beer (if you like!).
